Perfection on a Bun

Yesterday we made the pilgrimage to the famous restaurant landmark the Fuente Alemana in Santiago to try the Lomito, and in the words of the hunky Anthony Bourdaine: "This is a sandwich about which my feelings are unconflicted." The Lomito is a Sandwich made of pork which is boiled, maybe deep fried, and then fried on a griddle. It's piled high on delicious bread and then topped with...wait for it...tomato, avocado, and mayo. And indeed, my feelings are unconflicted, this sandwich is outrageous.



What's more outrageous is the biddies who cook these Lomitos. The restaurant consists of a dining counter around a central staging aread, where the waitresses take orders and prepare all the sandwiches simultaneously. They dip two forks barehanded into the boiling cauldron to retrieve the pork, grease splashing, grill sizzling. About eight women are hustling and bustling, forking meat and spreading avocado.



You can see the fancy Chilean napkin holder in the foreground. However, the most impressive part about these women is that they perform the delicately choreographed dance in sandals, some in flip-flops! Now, I ask you all to please reserve judgment on the amount of mayo and fried meat I've been consuming, I can assure you, I'm in no danger of cardiac arrest. Sound body, sound mind. It's how I roll.
